 Dubious Marketing Practices Over the last few years, a massive new acai health drink demand has resulted from extremely well-oiled marketing campaigns surrounding a number of new acai product launches. Some of the claims being made for liquid acai health drinks are quite extraordinary. Juice Processing and Additives To further compound the problem, liquid health drinks are pasteurized (traditional or flash); to prevent the liquid deteriorating and becoming rancid before the bottle of product is opened and consumed. Flash pasteurization is the process of heating the liquid for approximately 15–30 seconds and then immediately cooling. By only briefly subjecting the acai to high temperatures, most -- but not all -- taste and color changes are avoided. Flash pasteurization is preferred to other methods because it kills most but not all microbes and destroys only some of the beneficial phytonutrients found in acai.
